Halal Product Testing: Why Laboratory Testing Matters for Halal Verification

Halal product testing are products that have been declared permissible in accordance with Islamic law. Within Indonesia’s Halal Product Assurance (Jaminan Produk Halal/JPH) system, halal compliance is not limited to the ingredients used but also covers the entire Halal Product Process (Proses Produk Halal/PPH), including material sourcing, processing, storage, packaging, distribution, sales, and product presentation.

These requirements and halal product testing apply to various product categories, including food, beverages, pharmaceuticals, cosmetics, chemical products, biological products, and consumer goods.

Is a Halal Label Alone Enough?

Many consumers assume that the presence of a halal label on a product is sufficient to guarantee that the product is halal. However, halal product testing plays an important role because halal compliance involves more than the label displayed on the packaging.

Halal product testing is also relevant to evaluating the ingredients used, while halal compliance more broadly considers the processes involved throughout the product’s lifecycle. Under the Halal Product Assurance system, this includes material sourcing, processing, storage, packaging, distribution, sales, and presentation.

Therefore, halal product testing in the laboratory can play an important role when the origin or halal status of certain materials needs to be analytically verified. Some ingredients cannot be identified solely based on their appearance, color, aroma, or general information provided on the label.

Animal-derived ingredients, for example, may be present in various products in the form of gelatin, collagen, enzymes, proteins, or other processed derivatives. BPJPH also emphasizes that a product's halal status is established through a Halal Certificate, rather than claims such as “no pork” or “no lard”, or through the use of religious attributes.

A valid Halal Certificate is obtained through an established examination and certification process in accordance with applicable regulations. Therefore, understanding the process behind a halal label is important so that consumers do not rely solely on the symbol displayed on the packaging but also recognize that halal assurance involves the evaluation of both materials and production processes.

Which Ingredients Require Attention in Halal Testing?

In halal product testing, not all ingredients carry the same level of halal-related risk. Materials that require closer attention generally include those that may originate from animal sources, undergo complex processing, or have origins that are difficult to trace.

In halal product testing, the source of an ingredient cannot always be determined solely by its physical characteristics, making analytical approaches necessary for authentication. Examples of ingredients that may require further evaluation include gelatin, collagen, animal proteins, enzymes, and other animal-derived ingredients.

In halal product testing, ingredients found in food, pharmaceutical, and cosmetic products may serve various functions, such as texture modifiers, emulsifiers, stabilizers, active ingredients, or processing aids. The complexity of product matrices, particularly in cosmetics and processed products, can also present challenges in identifying the origin of certain ingredients.

For this reason, halal assessment should involve the traceability of both materials and production processes. When analytical verification is required, laboratory testing can be used to detect relevant parameters such as specific markers, DNA, proteins, peptides, or chemical characteristics associated with the testing objective. 

How Is Halal Testing Conducted in a Laboratory?

In general, laboratory testing begins with identifying the type of product and the parameters to be examined. Samples are then prepared using methods appropriate for their specific characteristics.

Sample preparation is an important step because food, cosmetics, pharmaceuticals, and other products have different matrices, meaning that the analytical approach must be adapted to the type of sample and target analyte. Once the sample has been prepared, an appropriate analytical method is selected based on the testing objective.

If the presence of a particular material is suspected, the analysis may be directed toward detecting specific markers or components, such as DNA from a particular species, proteins, peptides, or chemical characteristics. Laboratory testing produces analytical data that can support the examination of specific parameters.

Laboratory-based approaches are particularly important because certain materials or contaminants cannot be identified through visual observation alone and require analytical methods with appropriate sensitivity and specificity. However, it is important to understand that laboratory testing is not the same as halal certification.

Laboratory testing provides analytical data on specific parameters, while halal certification is a broader process that involves the assessment of materials and the Halal Product Process in accordance with applicable requirements. In Indonesia, BPJPH is the government body responsible for administering the Halal Product Assurance system and issuing Halal Certificates under the applicable regulatory framework.

Laboratory Methods Used for Halal Product Testing

Various laboratory methods can be used to support halal product testing. These include Polymerase Chain Reaction (PCR) for detecting DNA from specific species, Enzyme-Linked Immunosorbent Assay (ELISA) for detecting specific proteins or antigens, and instrumental methods such as Fourier Transform Infrared Spectroscopy (FTIR) and Liquid Chromatography Mass Spectrometry (LC-MS/MS) for analyzing specific characteristics, markers, or chemical components within a sample.

These methods have been widely applied and developed for material authentication, including the identification of ingredients derived from specific animal species. The selection of an appropriate halal testing method should consider the type of product, sample matrix, target parameter, and the required level of sensitivity and specificity.

For products with complex matrices or ingredients that have undergone extensive processing, method selection becomes particularly important because DNA or protein markers may be degraded during manufacturing. In certain cases, mass spectrometry based approaches may provide a suitable alternative for identifying specific molecular markers. 

When appropriate and validated analytical methods are used, laboratory testing can provide objective scientific data to support the evaluation of raw materials and finished products in material authentication and the assessment of parameters relevant to halal product assurance.
